DELICIOUS HOMEMADE SWEET POTATO SALAD RECIPE FOR A HOT DAY

Am I the only one who walks into the grocery store hungry and leave even hungrier? Back home in Toronto, there is a particular grocery store I go to sometimes for groceries and they happen to sell some hot foods and salads. I tried their sweet potato salad and I was hooked instantly.

We have friends visiting us from Toronto and of course we have been eating out trying lots of tasty seafood which is great, but I needed a break. Most especially, what is better than a nice plate of salad on a scorching hot day? So I decided on a homemade sweet potato salad which I prepared all by myself.  While some potatoes salads are often loaded, I like mine simple, light and delicious, but feel free to share tips from your recipe with me in the comment below. I would love to try it while I am into it now :).

So here  is my easy sweet potato salad recipe

Servings: 2
Cooking Time: 1hr 15mins

Ingredients:
 3oz Sweet Potato
1 Egg
1/4 teaspoon of salt
3 tablespoon Whipped Salad Dressing
Instructions
1. Peel and Cut the sweet potato into halves. Then boil for 30-45 minutes depending on how soft you like your potato
2. Boil egg  for 10 minutes for a hard boil
3. Dice the cooked potatoes and the hard boiled egg separately
4. Combine the diced potatoes, egg, salt and whipped salad dressing in a bowl and mix carefully.
5. Chill in the refrigerator and serve cold

Voila! Sweet Potato Salad
Being in the tropics where the weather is nice and sunny, it is hard not to want to be outdoors all the time. I love the idea of dining on the beach, breakfast on the patio, hanging out in the garden or just being out in general, having a light lunch and a cold drink while relaxing.
